How it works
Between Palworld 0.7 and 1.0 the breeding table changed by 358 entries: 212 parent combinations were added and 146 were removed.
Most of that movement follows from 72 new Pals. A new species does not add one row to the table — it becomes a possible child for every pair whose rank target lands near it, and a possible parent for every pair it can enter, so the table grows in both directions at once.
The Pals whose combination lists grew most: Aegidron (1), Amione (1), Anubis (1), Arsox (1), Astegon (1), Azurmane (1), Azurobe (1), Bakemi (1). Each of those has a combination page listing the current pairs in full.
1 breeding mechanic changed as well, which matters more than a row count: a mechanic change can alter what a pair produces without any row being added or removed.

Do breeding pairs removed in Palworld 1.0 still work on an old save?
The 146 removed combinations belong to the earlier version's table, so a save running that version still resolves them. On 1.0 they do not produce their old child, and a Pal that can now only be obtained that way is a legacy build.
Which Pals became easier to breed in Palworld 1.0?
Aegidron gained the most parent combinations at 1, followed by Amione (1), Anubis (1), Arsox (1). More parent pairs means more ways in, not a higher chance per attempt.
